Breadthrough Ingredients for the Future of Bakery

The bakery industry is becoming more dynamic and continues to expand as food trends are a constant change, and one of which is the increase in the demand for on-the-go meals such as breads and pastries. CTC Group Philippines organized a Bakery Seminar entitled Beyond the Basics: Breadthrough that was held last March 27, 2025 at The Maya Kitchen in Makati City. The event highlighted enzymes that are used to enhance the volume and quality of bakery products, En Prove and En Prove AM, and functional ingredients applicable to baking.
As the event continues to promote natural ingredients such as enzymes, the possibility of collaboration for Gluten-free Bread was also introduced. The event brought together clients from different areas of the bakery industry to bring awareness on the use of enzymes. The event was hosted by Mr Christopher Obrien, who also shared some insights on market challenges, outlooks, consumer preference, and trends in the bakery industry today. featured two major activities, the Technical Presentation and the Hands-on Activity, which was facilitated by two experts, Ms. Mary Daphne Valderrama and Chef Lalaine Lim.

Ms. Mary Daphne Valderrama presented the Technical Presentation in which the highlighted enzymes were thoroughly explained. Her presentation included the nature of the highlighted enzymes, their parameters, their usage, the effect, and how the attendees will benefit from the use of enzymes.

Chef Lalaine Lim, a seasoned chef in the bakery industry, conducted the Hands-on Activity. The activity aimed to showcase the first-hand effect of enzymes when it is applied to breads and its comparison to those that are untreated with enzymes. The invited guests were guided by Chef Lalaine Lim, together with CTC Group Philippines’ R&D, Ms. Wendy Lyn Reyes, and Mr. John Angelo Noche in baking Dinner Rolls and Cupcakes.

During the Hands-on, the participants had a thorough interaction with the team through a Q&A portion wherein some of their questions and concerns regarding the enzymes were addressed. The event was truly a success, as CTC Group Philippines continues to bring awareness and introduce the use of natural ingredients to promote product innovation, development, and environment sustainability. Indeed, the event was a Breadthrough in the future of bakery.
